🍅 Ingredients:

  • 1 cup carrots (chopped) 🥕
  • ½ cup courgette (chopped) 🥒
  • ½ cup red pepper (chopped) 🌶
  • ½ cup sweet potato or butternut squash (chopped) 🍠
  • 1 small onion (chopped) 🧅
  • 2 cloves garlic (minced) 🧄
  • 1 tin (400g) chopped tomatoes 🍅
  • 1 tbsp olive oil
